It must be aged in the natural limestone caves of this region to carry the official name. The cool air and natural humidity inside these caves help create its unique flavor and texture. Roquefort is also protected under the European Union’s Protected Designation of Origin system. This means only cheese made in this specific area, using approved methods, can legally be labeled Roquefort.
